De Fermo

De Fermo winery of Nicoletta De Fermo and Stefano Papetti is located in Loreto Aprutino, Abruzzo, halfway between the Adriatic sea and the southernmost glacier in Europe. Their 17 hectares of vineyards grow at 320 meters above sea level on rich mineral soils. The grape varieties are typical of Abruzzo, Montepulciano and Pecorino, except for some Chardonnay vines, are grown according to biodynamic farming principles to enhance the potential of the soil and grapes, whose characteristics are clearly expressed in the wines.

The wines are vinified in an early ‘800 cellar. Only large wooden barrels and concrete vats are used in fermentation and ageing. No selected yeasts or enzymes are used during the vinification, nor temperature controls. The wines are not clarified nor filtered.

Farming techniques, field works, manual activities, spirituality, education, observation, listening, dialogue, silence: each of these elements represents the research, heart and substance of De Fermo winery.
