Brut Revolution it’s a complex and ambitious Brut Pas Operè. Maceration on the skins of Chardonnay, direct pressing of Pinot Noir. Fermentation by indigenous yeasts. No fining, stabilisation, filtration and corrections during the 7 months of ageing in barrels. Then follows the assembly of the 12 most mineral and savoury wine bases, bottle ageing for 32 months.
