Change Man is a Blanc de Blancs immensely rich and developed in taste. Maceration and fermentation by natural yeasts. No fining, stabilisation, filtration and corrections during the break of 7 months in barrels. After the ageing starts the assembly of the 10 most round and floral bases, then follows bottle ageing for 32 months.

Cà del Vént is located on top of the clay and limestone - rich hills of the Campiani of Cellatica (350/430 m a.s.l.), a protected park on the eastern boundary of the Franciacorta region(Lombardy). The estate covers only 7 hectares and the vineyards enjoy a south/south west-facing position with quite steep slopes, a unique windy and dry microclimate ( the name Cà del Vént means the “ House of Wind”). Our key is a dense network of deep underground springs that brought over time different mineral substances on the surface and made the soil extremely heterogeneous even within the same vineyards. A scrupulous micro-zoning and mapping work has returned the oenological vocation of 13 different "cru", with great differences from the physical point of view (size, structure, porosity), chemical (supply of mineral elements and their availability to plants, pH) and biological (fauna and telluric micro-flora, enzyme endowment and development of organic substance). In order to embody the distinctive characteristics of each cru in any single grape , vineyards or any portion of the vineyard are treated with customized agronomic practices ( rootstock, variety, the technique of winter pruning, the number of buds, the green management, the grassing, the fertilization and the date of harvest are all are customized to best suit each unit features) performed only manually. The yield is 1kg/grape per vine with 7000 stocks/he and a total production of 40.000 bottles . The best way to transfer the features, the energy and life of the soil to the grapes is through a biodynamic approach. We do not use chemicals and herbicides , we self- fertilize with our humus and wild plants whose biological cycle follows the planetary influences , we take care of each plant in a sustainable way ( low production , balanced diet and cuts to the minimum ), we favor biodiversity ( plant trees fruit and flower essences near the vineyards , protection and enhancement of micro-organisms and insects ), we give great value to the energies of the sun and earth through sound frequencies and administration of biodynamic preparations . At the same time active experimentation in the vineyard plays a key role : we set about 0.30 hectare to tests new approaches to vines from major diseases aiming to new methods non-toxic not only to plants, but also to animals and humans. In 2011 we made the first wines with no copper and no sulphur at all using, instead, liquid mixtures of plant extracts, algae and propolis to fortify the vines. In the winery, the grapes from each cru are carefully tasted first. Then we decide how to vinify them. We do not follow any protocol of vinification, what we do is done instinctively, based on the feelings the grapes give us. Our purpose is to make wines that give the same flavor and scent of their must. We never mix grapes or musts that come from different cru or different vinification (in case we process different ways grapes of the same area). Every year make about 25 different bases sparkling, 2 white wines and 15 red wines, all vintage . Cellatica d.o.c apart , our local red wine made in steel vat, all the base wines are vinified in barrels trying to have a wine with the same potential energy of the grapes . We do not make any stabilization , we do not impoverish with any fining or filtration and we do not add any product to grapes. What we want is to express life in the wine , so that what is naturally unstable has to become stable and alive, able to enrich the wine and let it evolve over time instead of impoverishing it . In the case of the classic- method ( sparkling Franciacorta) we make Pas Operè, a category currently not ruled by the normative that gains a special meaning to us: with this approach we do not add anything to the wine in order not to modify its characteristics before and after fermentation. At the disgorgement the wine is filled only with same wine from other bottles of the same batch . Pas Operè has not to be confused with Pas Dosè/ Nature/Dosage Zero, whose classification focuses only on total residual sugar (0-3 g / l) and not on the adding of even a not sugary liqueur d'expedition that sometimes is well accepted and gives a certain style or completes what the wine lacks. The differences between each of our Franciacorta therefore do not come from the style the oenologist wants, but from the selection of the single basic wine which must reflect the soil and the climate of that season: the brut pas operè is a cuvée of the most mineral and fresh wines, the blanc de blanc pas operè is a cuvée made of the most buttery, floral and creamy chardonnay base wines. The wines are made not following a specific standard, a rule or a recipe. Every year we taste what the season gives us. That’s why we say we don’t want a “style” by the oenologist, but instead we look for a sign of the terroir and the climate in order to have true wines. You will have in the glass exactly what we got from the vineyards, a fair, straight, frank wine with no manipulation. Even still red and white wines are produced enhancing the character of territoriality of the grapes and keeping it up to the wine is made. Anything that is not in the grapes will not be added to the wine. We maintain the centuries-old tradition of Cellatica with the local Cellatica doc red, a blend of local autochthonous varieties made in stainless steel vats. Just because a wine should not be judged only by its features but also by the history that it brings we report and show in every label the hard work we made in the vineyard, the characteristics of that vintage, the wine-making procedures, the ingredients and analytical parameters: total sulfur dioxide, total acidity, volatile acidity, dry extract, pressure, residual sugar. It 's our contribution to the growth of the consumer towards a drink aware and attentive. The wine is also culture . Finally, since 2010, Cà del Vént is one of the 142 European companies that joins VinNatur, a natural winemakers association. Being part of the association implies that every year we submit our wines to the analysis of pesticides as well as the taste of natural character, personality and territoriality. The failure to comply with these two parameters result in expulsion from the association.
